Lemon Olive Cake




Wanted to try out something different and I ended up making this Lemon Olive Cake.
Healthy, Tasty and Moist is the 3 words that can be used to describe it.

I copied the recipe from here and am going to put it down here from her blog so that I can remember it the next time.
For the cake:




1 egg



1 cup wheat flour



1/2 cup maida



A pinch of salt



About 3/4 cup granulated sugar



About 1 tablespoon lemon zest



1 tablespoon lemon juice



1 teaspoon baking powder



1/4 teaspoon baking soda



1/2 cup oil



1/4 cup buttermilk



For the glaze:



1 teaspoon lemon juice



1-1/2 tablespoons powdered sugar



Recipe:



1. In a bowl, mix together the lemon juice, egg, oil, buttermilk, lemon zest, and granulated sugar. Beat well, till the sugar melts fully.



2. Add the other ingredients – maida, salt, baking powder, baking soda and wheat flour – to the bowl. Fold into the wet mixture gently. Mix everything thoroughly.



3. Preheat the oven for 10 minutes at 180 degrees. In the meanwhile, grease and flour a cake tin and keep ready.



4. When the oven is hot and ready, pour the batter into the cake tin. Let it bake for about 40 minutes at 180 degrees, or until a knife inserted into the middle of the cake comes out clean.



5. While the cake is cooking, prepare the lemon glaze. For the glaze, mix together the teasponfull of lemon juice and powdered sugar well. While the cake is still warm, remove it from the cake pan and spread the glaze evenly all over it.



Visit to State Capitol and Sculpture Garden

Parents were not jet lagged just tired the 1st day and then they were back to normal. Sunday 11th May we decided to take them Downtown Minneapolis.

After lunch we left home by 12:30, our first stop was State Capitol, the building has a very beautiful architecture and we walked all 3 floors and admired the beauty of the building. kids were running everywhere around. From there we visited the Cathedral. it was so peacful and calm and very beautiful. We lighted some candles and then went to the MN History Center Museum. G did not want to come and we somehow thought it is a free Sunday event and we all went without taking any cash.
When we entered we realized it it not free but being Mother's day all Mother's could visit free. Poor Dad had to wait outside, while we went and explored the different sections. Again there were lots of thinks for kids to play around and hence P&R had a great time. We left at 3:30 and then went to Sculpture garden which is very famous for the Spoon & Cherry sculpture created there.

There are various other sculptures and the weather being nice, it was great to just walk around. We clicked lots of pictures and then returned home by 6pm.

What we made this Valentines



Every year for Valentines R's day-care has this scheduled gift giving out. Now not to be left behind I wanted to make something creative to give to his friends and also I did not want to give out candy.

Food Post

So being highly inspired by this Patterned roll I decided to make this for our wedding Anniversary. Having said that I got peaches for the filling and printed out the words on a A4 size word paper. Following the instructions I made the piping design, the icing was a little soft but neverthelesee I managed the words and heart shapes and kept them in the cooler. I then baked the cake which was spongy but cracked a little and also it was too thick to get rolled into a swiss roll.

So I just improvised and covered it with whipping cream and then decorated with peaches.
It was very tasty neverthless

And they are here

My family has arrived from India for a vacation. yooohooooooooo
They did have a scare when they reached the airport and were informed that their flight was cancelled. It seems the Air france had a scheduled cancellation adn send us sms but we never received any message of that sort.

They came to know only when they reached the airport, luckily there was seats in the Delta airlines which infact left earlier at 1 instead of thier scheduled 2 am and they reached here an hour earlier. So everything does happen for the Best.

Thier flight landed at 12:15 pm, we left home after their flight landed, picked up some hoaggies from Davanni and reached airport, had lunch and when we were done they all came out. After hugs we got into the car and reached home.

Then we got to eat some yummy chakadda(jackfruit)/cake (made by mom)
Kids started playing/fighting with each other. After they got fresh they were tired and felt sleepy , in the meanwhile me and G went to Costco and Indian Store.
Returned home, made dosa/ ridgegourd chutney and ended with some rice and curd.

Night all rested well.
