Post 10 - Food Receipe Blogathon 2017

Yesterday I felt like eating Malai Kofta and I knew I had paneer and potato at home, so I went to whole 9 yards and made Malai Kofta with garlic naan.
Here is how I did it:-
For the Koftas
Boiled 1 potato
Some paneer crumbled
Mix together with red chilly powder, garam masla, pinch of salt and some turmeric, I added some besan and then made small balls of it. I took the paniyaram vessel and shallow fried them.

For the gravy I took oil in a vessel, added cashews, onion, sautéed till brown and added tomatoes, mixed well for about 10 mins. Once cooled then grinded it, took the mixture in a vessel, added salt, red chilly powder, coriander powder and the koftas.

For the naan, I tool 50% maida and wheat flour, made a douch with hot water, milk and oil, added some chopped garlic to this.
Heated a tava on high flame and made the naan.

Lemon Olive Cake




Wanted to try out something different and I ended up making this Lemon Olive Cake.
Healthy, Tasty and Moist is the 3 words that can be used to describe it.

I copied the recipe from here and am going to put it down here from her blog so that I can remember it the next time.
For the cake:




1 egg



1 cup wheat flour



1/2 cup maida



A pinch of salt



About 3/4 cup granulated sugar



About 1 tablespoon lemon zest



1 tablespoon lemon juice



1 teaspoon baking powder



1/4 teaspoon baking soda



1/2 cup oil



1/4 cup buttermilk



For the glaze:



1 teaspoon lemon juice



1-1/2 tablespoons powdered sugar



Recipe:



1. In a bowl, mix together the lemon juice, egg, oil, buttermilk, lemon zest, and granulated sugar. Beat well, till the sugar melts fully.



2. Add the other ingredients – maida, salt, baking powder, baking soda and wheat flour – to the bowl. Fold into the wet mixture gently. Mix everything thoroughly.



3. Preheat the oven for 10 minutes at 180 degrees. In the meanwhile, grease and flour a cake tin and keep ready.



4. When the oven is hot and ready, pour the batter into the cake tin. Let it bake for about 40 minutes at 180 degrees, or until a knife inserted into the middle of the cake comes out clean.



5. While the cake is cooking, prepare the lemon glaze. For the glaze, mix together the teasponfull of lemon juice and powdered sugar well. While the cake is still warm, remove it from the cake pan and spread the glaze evenly all over it.

Food Post

So being highly inspired by this Patterned roll I decided to make this for our wedding Anniversary. Having said that I got peaches for the filling and printed out the words on a A4 size word paper. Following the instructions I made the piping design, the icing was a little soft but neverthelesee I managed the words and heart shapes and kept them in the cooler. I then baked the cake which was spongy but cracked a little and also it was too thick to get rolled into a swiss roll.

So I just improvised and covered it with whipping cream and then decorated with peaches.
It was very tasty neverthless

Fun Filled Week-ends

This week-end was again busy like all week-ends. On Friday I baked some garlic rolls (which were super tasty) and made my lemon cake again. Sat was BIL's bday and cake sutting was organized at 12.00. Since me and Ritvik slept we could not make it.
Sat morn we woke and i cooked some yummy vermicilli upma followed by tangy mango dal for lunch.
Evening we had to go for a birthday party at Pump It Up. We reached at 6 and kiddo had a great time playing around. It was a small get-together and even we had great fun.
Returning home played cards till 11:30 and off to bed.
Sun morning was a friend's baby shower at our party hall. i tried to drape a saree fo rhalf an hour, failed miserably and then wore my salwar.
Function started at 12:00, food was served by 1:00. It was very yummy, had lots of ice-cream and gulab jamun, napped in the afternoon, then went to play volleyball, night made 2 pachadi's (mango and pavakya)

Thus ended the lovely week-end, waiting for the next one.

Mushroom Biryani


Ingredients:-
Wash and soak rice (preferably basmati) in water for at least half hour.
Cut and slice onions thinly and fry them in oil till brown.
Marinate the cut mushrooms with curd, red chilly powder, salt and turmeric powder.
Heat oil in a vessel and add bay leaves, cloves, cinnamon and cardamom, then add cut onions and fry slightly, next add the marinated mushrooms, salt and saute again, finally add some mint and coriander leaves.
To this add the soaked rice and mix well, and cook in a open vessel till the rice is cooked well.
Once done garnish with the fried onions.

Small Potato Biryani

Well, I hardly make any dishes from potato so when I got some baby potatoes from Farmer's market I was at a loss what to do except fromt he usual frying as I wanted to try out something different.
I happened to see this receipe at Rak's Kitchen and immediately decided to try it(ofcourse in a different version)

Ingredinets:-
Basmati Rice - 1 cup
Baby potatoes - 6 nos
Youghurt - 1/4 Cup
Corriander Leaves - 1/2 bunch
Bay Leaves , Cloves, Cardamon - 2 nos
Salt - As needed
Oil - As needed
Spring Onions - 4 nos
Garlic - 2 nos
Ginger - 1/2 piece

1) Wash and soak rice in water for 15 mins
2) Pressure cook potatoes for 3 whistles, was, peel the skin, dry them and then deep fry in oil till brown(Next time onwrds will shallow fry)
3) Make a paste of youghurt and corriander leaves
4) In cooker add ghee, when hot add ginger & garlic pieces, along with Bay leaves, cardamon and cloves.
5) Next add spring onions and salt, Always add extra salt as we are going to add rice.
6) Add coriander powder, red chilly powder, Biryani masala, turmeric powder(basically any powders to enhance the taste, of course refrain from talcum powders--hehe PJ)
7) Now add the potatoes and then add the curd+coriander paste, let it heat well for some time, let the potatoes absorb the flavour
8)Then add rice along with water, close and pressure cook for 2 whistles.
9) Garnish with top part of spring onions
Delicious potato biryani is ready to be eaten.

Blog 18 - Holiday Inn

Today I went to Holiday Inn, there was a company meeting hosted there. The sole purpose for me to go there was to check out the hotel, I had no interest whatsoever in the company meeting and in office there was not much work...
I have already been to Westin and Sheraton, so time to check out a new place.
It was not like the Holiday Inn in India and outside it looked like any Motel 8, with just 2 floors of accommodation I believe....
On entering in one has to cross the indoor pool to reach the hall that we were seated in. Quite a nice thing they had done with the pool with sculptures around it and tables arranged by the side for lunch.
The session had the usual breakfast with bagels, muffins, coffee.................
Lunch was a really good affair with Pasta, Salad, Chicken breast and soup..All the items tasted delicious...I should have put it in their feed back form but left a little early so as to not hit peak traffic.
So in all it turned out a good event, well the session was not 2 bad either :)
